Bison Carne Asada

Bison Ingredients

1 1lb bison skirt steak (can use grass fed beef in place of)bison-carne-asada
¼ cup lime juice
Zest from 1 lime
2 tsp cumin
⅛ tsp cinnamon
1 tsp ground red pepper flakes
4 garlic cloves, minced
2 tsp extra-virgin olive oil
Dash of Sea Salt

Bison Directions

1. Prepare all ingredients and put in a bowl, except steak
2. Pour marinate into a zip lock bag
3. Place steak in the bag = marinate 3-8 hours
4. Pre-heat grill to medium high
5. Grill the steak 3 minutes per side
6. Let steak stand for 10 minutes
7. Cut into ¼-½ pieces

Pico de Gallo Ingredients

1½ cup plum or roma tomato, diced and seeded
⅓ cup diced white onion
¼ cup diced cilantro
1 tbsp jalapeno, diced and seeded
2 tbsp fresh lime juice
1 garlic clove, minced
½ tsp cumin

Pico De Gallo Directions

1. combine all ingredients together in the same bowl you will be serving them in
2. Let marinate in the refrigerator for at least 1 hour

Assembly Directions

1 avocado sliced into thin slices & drizzled with lime juice
8-10 corn tortillas, lightly grilled to warm and color up
Lay out the tortillas on a giant platter
Evenly spread the steak slices on each tortilla in the center
Place a slice or two of avocado on top of the steak
Place a tbsp or two of Pico de Gallo on top of the avocado
Serve and enjoy!!!
