Chicken and Basil Panini

Ingredients

Olive Oil or Coconut Oil cooking spraybasil chicken panini
2 slices of sprouted grain bread or gluten free bread
4-6oz chopped rotisserie chicken breast
1 roasted garlic clove, pressed into a paste
1 tbsp minced sundried tomato
2 tsp basil leaves, minced
3 basil leaves whole
1 slice fresh organic mozzarella

Directions

1. Pre-heat a Panini press
2. Mix the garlic, sundried and basil together; spread it evenly on the insides of the bread
3. Place the chicken, basil leaves and lastly the mozzarella on top of each other on one piece of the bread
4. Place the other slice on top of the mozzarella
5. Spray the Panini grill and then place the sandwich on the grill
6. Press down on the sandwich firmly
7. Grill the Panini until it is to your liking

**Select oven baked sweet potato chips or fries as a great side; or you could eat organic freeze dried apple chips**
