Easy Pork and Sweet Potato Stew

Ingredients

1 tbsp extra-virgin olive oilpork-sweet-potato-stew
1 organic onion, chopped
4 garlic cloves, chopped
½ tsp sea salt
½ tsp cayenne pepper
1.5 lb Pork tip or tenderloin
2 tbsp chili powder
1 tsp ground cumin
2 cups low-sodium chicken broth
16oz no-salt tomato sauce
1 tbsp organic raw unfiltered honey
1.5 lbs sweet potatoes, peeled and cubed

Directions

1. Heat the oil in a large sauce pan over medium heat
2. Add onion, garlic, salt, and pepper and sauté until golden / slightly caramelized; about 10 minutes
3. Turn up the temperature to medium-high and add in pork. Mix well and then let the meat brown on all sides
4. Add in the chili powder and cumin, mix well
5. Add in the chicken broth, tomato sauce and honey; bring to a simmer
6. Reduce heat to low or medium-low; let simmer 1.5 hours or until the pork falls apart with touch
7. Add in sweet potatoes and let simmer about 30 more minutes
8. Remove from heat, remove the lid and let cool slightly before serving
**This dish tastes much greater when served the next day because the flavors have a chance to come together**
**You can even serve the stew over a bed of faro or Quinoa; or just eat it plain**
